In a medium bowl, whisk together the lime juice, olive oil, soy sauce, smoked paprika, oregano, black pepper, garlic powder, salt, cumin, and chili powder to create the marinade.
Add the shrimp to the marinade, toss to coat completely, and cover the bowl. Refrigerate for at least 30 minutes, but no more than 2 hours.
Preheat your grill to medium-high heat (about 400 degrees Fahrenheit). Lightly oil the grill grates.
Thread the marinated shrimp onto skewers, if desired, leaving a small space between each piece. Discard any remaining marinade.
Place the shrimp on the hot grill. Grill for 2 to 3 minutes per side until the shrimp curl into a C-shape and turn opaque. Avoid overcooking.
Remove the shrimp from the grill. Immediately place them in a clean bowl.
Zest the orange over the shrimp, then squeeze the fresh orange juice over them. Toss gently to coat.
Garnish with fresh cilantro before serving.
Notes
If you do not have skewers, you can place the shrimp directly on a grill basket or a piece of foil placed on the grates.
For a spicier version, add 1/4 teaspoon of red pepper flakes to the marinade.
Serve this shrimp over coconut rice or alongside a simple avocado salad.
