Ingredients
Scale
1 pound large shrimp, peeled and deveined
1 cup all-purpose flour
2 large eggs, beaten
1 cup sweetened shredded coconut
1/2 cup Panko breadcrumbs
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray
Instructions
Pat the shrimp completely dry with paper towels. This step helps the coating stick and crisp up.
Set up a standard breading station with three shallow dishes. Place flour in the first dish. Whisk the eggs in the second dish. Mix the shredded coconut, Panko breadcrumbs, salt, and pepper in the third dish.
Dredge each shrimp first in the flour, shaking off excess.
Dip the floured shrimp into the egg mixture, letting excess drip off.
Press the shrimp firmly into the coconut-Panko mixture until fully coated.
Lightly spray the breaded shrimp on both sides with cooking spray.
Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius).
Arrange the shrimp in a single layer in the air fryer basket, ensuring they do not overlap. Work in batches if necessary.
Air fry for 8 to 10 minutes, flipping the shrimp halfway through the cooking time, until golden brown and cooked through.
Serve immediately with your preferred dipping sauce.
Notes
For extra crispiness, chill the coated shrimp on a wire rack in the refrigerator for 15 minutes before air frying.
If you use frozen coconut shrimp, do not thaw them first. Cook at 375 degrees Fahrenheit (190 degrees Celsius) for 12 to 15 minutes, shaking the basket halfway through.
A simple dipping sauce is made by mixing 1/2 cup apricot preserves with 2 tablespoons sweet chili sauce.
