You want restaurant-quality potato wedges without the deep fryer mess? These air fryer potato wedges deliver that perfect contrast: incredibly crispy on the outside and wonderfully fluffy inside. This easy recipe uses simple pantry staples to create a fantastic side dish or snack ready in minutes.

Ingredients

Scale
  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 2 tablespoons grated Parmesan cheese (for the last 5 minutes of cooking)

Instructions

  1. Wash and dry the Russet potatoes well. Cut each potato lengthwise into 8 equal wedges.
  2. For extra crispiness, soak the cut potato wedges in cold water for at least 30 minutes. Drain them completely and pat them very dry with paper towels. This step removes excess starch.
  3. In a large bowl, toss the dried potato wedges with the olive oil until lightly coated.
  4. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper.
  5. Sprinkle the seasoning mix over the oiled wedges and toss again until every wedge is evenly coated.
  6. Preheat your air fryer to 380°F (195°C).
  7. Place the seasoned wedges in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary to achieve the best crispiness.
  8. Air fry for 15 minutes. Shake the basket well.
  9. Continue to air fry for another 5 to 10 minutes, or until the wedges are golden brown and crispy. If using Parmesan, toss the wedges with the cheese during the last 5 minutes of cooking.
  10. Remove from the air fryer and serve immediately as a quick potato side dish or simple air fryer snack.

Notes

  • If you prefer a spicy kick, add 1/4 teaspoon of cayenne pepper to your seasoning blend.
  • For a Garlic Parmesan Potato Wedges Air Fryer variation, add the Parmesan cheese during the last 5 minutes of cooking time.
  • If your wedges are not as crispy as you like, you can cook them for an additional 2-3 minutes at 400°F (200°C).
