Enjoy the warm, spiced flavors of fall with these delightful Apple Cider Donut Muffins. They’re tender, moist, and coated in a sweet cinnamon-sugar mixture, just like your favorite festival doughnuts, but baked fresh at home.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple cider
  • 1/2 cup sour cream or plain yogurt
  • For the Topping:
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream together the sugar and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, whisk together the apple cider and sour cream (or yogurt).
  6. Alternately add the dry ingredients and the apple cider mixture to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  7. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  9. While the muffins are baking, prepare the topping. In a shallow bowl, combine the sugar and cinnamon for the topping.
  10. Once the muffins are baked, let them cool in the tin for a few minutes before transferring them to a wire rack.
  11. While the muffins are still warm, brush the tops generously with the melted butter.
  12. Immediately dip the buttered tops into the cinnamon-sugar mixture, coating them well.
  13. Let the muffins cool completely on the wire rack before serving.

Notes

  • For an even stronger apple flavor, you can reduce the apple cider by 2 tablespoons and add 2 tablespoons of unsweetened applesauce to the batter.
  • Ensure your butter is truly softened, not melted, for the best creaming results.
  • Don’t overmix the batter; a few lumps are okay. Overmixing can lead to tough muffins.
  • You can test for doneness by gently pressing the top of a muffin; it should spring back.
