Ingredients
Scale
2 tablespoons olive oil
4 (6-ounce) pork chops
1 teaspoon salt
1/2 teaspoon black pepper
1 cup apple cider
1/4 cup apple cider vinegar
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 teaspoon fresh thyme leaves
Instructions
Pat the pork chops dry with paper towels. Season both sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear the pork chops for 2-3 minutes per side until golden brown. Remove from skillet and set aside.
In the same skillet, add apple cider, apple cider vinegar, brown sugar, and Dijon mustard. Bring to a simmer, stirring to dissolve the sugar.
Return the pork chops to the skillet. Reduce heat to medium-low, cover, and simmer for 8-10 minutes, or until the pork chops are cooked through and the glaze has thickened.
Stir in fresh thyme leaves.
Serve the pork chops with the glaze spooned over the top.
Notes
For thicker chops, increase cooking time.
Adjust brown sugar for desired sweetness.
A pinch of cinnamon can be added to the glaze for extra warmth.
