Make these easy, no-bake avalanche cookies using peanut butter, white chocolate, and crispy cereal for a quick, sweet treat perfect for gifting or holidays.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar, sifted
  • 12 ounces white chocolate melting wafers or almond bark
  • 3 cups crispy rice cereal
  • 1 cup mini marshmallows

Instructions

  1. Line two large baking sheets with parchment paper.
  2. In a large bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth.
  3. Gradually add the sifted powdered sugar to the peanut butter mixture, mixing until fully combined into a thick dough.
  4. In a microwave-safe bowl, melt the white chocolate wafers or almond bark according to package directions, stirring until smooth.
  5. Pour the melted white chocolate over the peanut butter mixture. Stir gently to combine.
  6. Fold in the crispy rice cereal and mini marshmallows until they are evenly coated with the chocolate mixture.
  7. Drop rounded tablespoons of the mixture onto the prepared baking sheets.
  8. Allow the cookies to set completely at room temperature for about 30 minutes, or chill them in the refrigerator for 15 minutes until firm.

Notes

  • For a cleaner look, you can drizzle extra melted white chocolate over the tops of the set cookies before they fully harden.
  • If you prefer a firmer texture, use almond bark instead of standard white chocolate chips.
  • Store leftover cookies in an airtight container at room temperature for up to one week.
