Bake cod fillets until flaky and moist, topped with a crispy, flavorful crust made from panko breadcrumbs, fresh herbs, garlic, and lemon.

Ingredients

Scale
  • 4 (6 ounce) cod fillets, about 1 inch thick
  • 2 tablespoons olive oil
  • 1 tablespoon melted butter
  • 1 cup panko breadcrumbs
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Pat the cod fillets dry thoroughly with paper towels. This helps the crust adhere and crisp up. Place the fillets on the prepared baking sheet.
  3. In a small bowl, combine the panko breadcrumbs, minced garlic, parsley, oregano, thyme, and lemon zest. Mix well.
  4. Drizzle the olive oil and melted butter over the panko mixture. Add the lemon juice, salt, and pepper. Toss everything together until the breadcrumbs are evenly moistened but still crumbly.
  5. Press the panko mixture firmly and evenly over the top surface of each cod fillet, creating a thick crust.
  6. Bake for 12 to 15 minutes, depending on the thickness of the fillets, until the fish is opaque throughout and flakes easily with a fork. The topping should be golden brown and crisp.
  7. Serve immediately.

Notes

  • For extra moisture, you can place a thin slice of lemon on top of the panko crust before baking.
  • If you prefer a richer flavor, substitute half of the olive oil with melted unsalted butter in the topping mixture.
  • You can use frozen cod, but thaw it completely in the refrigerator overnight and pat it very dry before coating.
