Make a cold potato salad that tastes like a fully loaded baked potato, featuring bacon, cheddar cheese, and a creamy dressing.

Ingredients

Scale
  • 3 lbs Russet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh chives
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons yellow mustard
  • 1 tablespoon white vinegar
  • 1/2 teaspoon garlic powder

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold water. Add 1/2 teaspoon salt. Bring to a boil and cook until potatoes are tender when pierced with a fork, about 10 to 15 minutes. Drain well and place potatoes on a baking sheet. Toss lightly with olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Roast at 400 degrees Fahrenheit for 10 minutes to dry the exterior slightly. Let cool completely.
  2. While potatoes cool, cook the bacon until crisp. Drain on paper towels and crumble.
  3. In a large bowl, whisk together the mayonnaise, sour cream, mustard, vinegar, garlic powder, 1/2 teaspoon pepper, and remaining 1/2 teaspoon salt until smooth.
  4. Add the cooled potatoes, crumbled bacon, cheddar cheese, celery, red onion, and most of the chives (reserve some for garnish) to the dressing.
  5. Gently fold all ingredients together until the potatoes are evenly coated. Be careful not to mash the potatoes.
  6. Cover the salad and chill in the refrigerator for at least 2 hours before serving to allow flavors to combine.
  7. Garnish with the remaining chives before serving.

Notes

  • You can boil the potatoes instead of roasting them after boiling, but roasting helps give the potatoes a texture closer to a baked potato.
  • Make this salad a day ahead for the best flavor.
  • Use full-fat sour cream and mayonnaise for the richest taste.
