Make creamy stovetop oatmeal naturally sweetened with ripe bananas, topped with a simple, warm banana caramel swirl for a comforting breakfast.

Ingredients

Scale
  • 1 cup rolled oats
  • 2 cups water or milk (dairy or non-dairy)
  • 1 ripe banana, mashed
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1 tablespoon maple syrup (optional, for swirl)
  • 1/2 banana, sliced (for swirl)

Instructions

  1. Combine oats, water or milk, mashed banana, cinnamon, and salt in a small saucepan.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally.
  3. Reduce heat to low and cook for 5 to 7 minutes, or until the oatmeal is thick and creamy. Stir frequently to prevent sticking.
  4. While the oatmeal cooks, prepare the swirl: In a separate small, non-stick pan, heat the maple syrup over medium-low heat until it bubbles slightly.
  5. Add the sliced banana to the syrup and cook for 1 to 2 minutes per side until lightly caramelized. Remove from heat.
  6. Divide the cooked oatmeal into bowls. Top each serving with the warm banana caramel slices.

Notes

  • Use very ripe bananas for the best natural sweetness.
  • For a thicker texture, use less liquid or cook for a few extra minutes.
  • Add 1 tablespoon of peanut butter during the last minute of cooking for added protein.
  • This recipe is naturally vegan if you use non-dairy milk.
