Make these easy grilled chicken skewers featuring a creamy, spicy, and sweet Asian-inspired sauce. This recipe is fast enough for a weeknight meal or perfect as a party appetizer.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to your spice preference)
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes)

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a bowl, toss the cubed chicken with olive oil, salt, and pepper. Thread the chicken pieces onto the prepared skewers, leaving a small space between pieces.
  3. Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
  4. Grill the skewers for 4 to 6 minutes per side, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F.
  5. While the chicken cooks, prepare the sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, honey, minced garlic, and grated ginger until smooth.
  6. Once the chicken is cooked, remove the skewers from the grill.
  7. Brush the Bang Bang sauce generously over all sides of the hot skewers. Serve immediately.
  8. For an air fryer alternative: Arrange skewers in a single layer in the air fryer basket. Cook at 380°F for 10 to 12 minutes, flipping halfway through. Brush with sauce after cooking.

Notes

  • For extra flavor, marinate the chicken in half of the sauce mixture for 15 minutes before grilling.
  • You can substitute chicken thighs for breasts if you prefer a richer flavor.
  • Garnish with chopped green onions or sesame seeds before serving.
