Enjoy a hearty and satisfying vegan meal with these BBQ Jackfruit Loaded Sweet Potatoes. Tender baked sweet potatoes are topped with flavorful, barbecue-seasoned jackfruit, creating a delicious and filling meatless dinner.

Ingredients

Scale
  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 can (20 ounces) young green jackfruit in brine, drained and rinsed
  • 1/2 cup BBQ sauce
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • Optional toppings: vegan sour cream, jalapeños, extra cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Bake the sweet potatoes for 45-60 minutes, or until tender when pierced with a fork.
  4. While the sweet potatoes are baking, prepare the jackfruit. Shred the jackfruit using two forks to remove any tough core pieces.
  5. Heat olive oil in a skillet over medium heat. Add the shredded jackfruit and cook for 5-7 minutes, stirring occasionally, until lightly browned.
  6. Add the BBQ sauce and chopped red onion to the skillet with the jackfruit. Stir to combine and cook for another 5-10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  7. Once the sweet potatoes are tender, carefully slice them lengthwise down the middle, being careful not to cut all the way through. Gently fluff the inside with a fork.
  8. Spoon the BBQ jackfruit mixture generously over the sweet potatoes.
  9. Garnish with fresh cilantro and any other desired toppings.

Notes

  • Ensure the jackfruit is young green jackfruit in brine, not ripe jackfruit in syrup.
  • Adjust the amount of BBQ sauce to your preference.
  • You can prepare the BBQ jackfruit mixture ahead of time and reheat it.
