Ingredients

Scale
  • 2 cups fresh blackberries
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Add the melted butter, egg, and vanilla extract to the dry ingredients. Mix until just combined to form a thick batter.
  4. Reserve about 1/2 cup of the batter. Spread the remaining batter evenly in the prepared baking pan.
  5. In a separate small bowl, gently toss the blackberries with lemon juice and cornstarch.
  6. Scatter the coated blackberries evenly over the batter in the pan.
  7. Dot small spoonfuls of the reserved batter over the blackberries, or crumble it over the top. Sprinkle with nuts if using.
  8. Bake for 30-35 minutes, or until the topping is golden brown and the blackberry filling is bubbly.
  9. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For an extra crumble topping, mix 1/4 cup flour, 2 tablespoons sugar, and 2 tablespoons cold butter until crumbly, then sprinkle over the berries.
  • You can use frozen blackberries, but do not thaw them before tossing with lemon juice and cornstarch. You may need to bake a few minutes longer.
