4 anchovy fillets, oil-packed, drained and chopped
1/4 teaspoon red pepper flakes
Salt to taste
Black pepper to taste
1 teaspoon lemon juice
Instructions
Bring a small pot of salted water to a boil. Add the broccolini and cook for 2 to 3 minutes until bright green and tender-crisp. Drain immediately and set aside.
Heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the minced garlic and red pepper flakes. Cook for 30 seconds until fragrant, being careful not to burn the garlic.
Add the chopped anchovy fillets to the skillet. Cook, stirring gently, until the anchovies dissolve into the oil, about 1 minute. Remove the skillet from the heat.
Toss the cooked broccolini with the anchovy-garlic mixture. Stir in the lemon juice.
Brush both sides of the sourdough slices with the remaining 1 tablespoon of olive oil. Toast the bread in a toaster, under a broiler, or in a dry skillet until golden brown and crisp on both sides.
Spoon the broccolini and anchovy mixture evenly over the toasted bread slices. Season with black pepper and a small amount of salt if needed. Serve immediately.
Notes
You can substitute regular broccoli florets for broccolini if needed, adjusting the cooking time slightly.
For extra flavor, rub a cut clove of raw garlic over the warm toast before adding the topping.
Use high-quality anchovies for the best flavor in the topping.
