Ingredients

Scale
  • 1 cup unsalted butter, divided
  • 3 cups all-purpose flour, divided
  • 1 teaspoon salt, divided
  • 2 tablespoons granulated sugar, divided
  • 1/2 cup ice water
  • 6 medium apples, peeled, cored, and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 large egg, beaten (for egg wash)
  • 2 tablespoons turbinado sugar (for sprinkling)

Instructions

  1. Brown 6 tablespoons of butter in a small saucepan over medium heat until fragrant and golden brown. Let cool.
  2. In a large bowl, combine 2 1/2 cups flour, 1/2 teaspoon salt, and 1 tablespoon granulated sugar.
  3. Cut in the cooled brown butter and remaining 2 tablespoons of butter until the mixture resembles coarse crumbs.
  4. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Divide dough in half, flatten into discs, wrap, and chill for at least 1 hour.
  5. In a separate bowl, combine remaining 1/2 cup flour, 1/2 teaspoon salt, and 1 tablespoon granulated sugar.
  6. Roll out one disc of dough and line a 9-inch pie plate.
  7. In a large bowl, toss sliced apples with 3/4 cup granulated sugar, cornstarch, cinnamon, nutmeg, and lemon juice.
  8. Pour apple filling into the pie crust.
  9. Roll out the second disc of dough and place it over the filling. Crimp the edges and cut vents.
  10. Brush the top crust with beaten egg wash and sprinkle with turbinado sugar.
  11. Bake at 400°F (200°C) for 20 minutes. Reduce heat to 375°F (190°C) and bake for another 30-40 minutes, or until crust is golden and filling is bubbly.
  12. Let the pie cool for at least 2 hours before serving.

Notes

  • For a snickerdoodle crust, ensure you brown the butter properly for maximum flavor.
  • Chill the dough sufficiently to make it easier to handle.
  • Adjust baking time based on your oven.
  • Allowing the pie to cool completely helps the filling set.
