Ingredients

Scale
  • 2 large sweet potatoes
  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup Buffalo hot sauce
  • 1/4 cup unsalted butter, melted
  • 1/4 cup crumbled blue cheese or ranch dressing
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Rub the sweet potatoes with olive oil, salt, and pepper.
  4. Place the sweet potatoes on a baking sheet and roast for 45-60 minutes, or until tender when pierced with a fork.
  5. While the sweet potatoes are roasting, prepare the chicken. In a bowl, combine the Buffalo hot sauce and melted butter.
  6. Add the chicken breasts to the sauce and toss to coat evenly.
  7. You can either bake the chicken alongside the sweet potatoes for the last 20-25 minutes, or cook it separately on the stovetop or in a slow cooker until cooked through.
  8. Once the chicken is cooked, shred it using two forks.
  9. Once the sweet potatoes are tender, carefully slice them lengthwise down the middle, creating a pocket.
  10. Stuff the sweet potato pockets generously with the shredded Buffalo chicken.
  11. Top with crumbled blue cheese or a drizzle of ranch dressing.

Notes

  • For an extra spicy kick, add a pinch of cayenne pepper to the Buffalo sauce mixture.
  • You can also use chicken thighs for this recipe.
  • If you don’t have Buffalo hot sauce, you can create your own by combining hot sauce with a little vinegar and garlic powder.
  • Serve with a side salad for a complete meal.
