You need a fresh, crisp side dish that comes together fast. This easy cabbage salad uses a light, tangy vinaigrette instead of heavy mayonnaise, making it perfect for BBQs, picnics, or a light weeknight meal. It stays crunchy for days, making it great for meal prep.

Ingredients

Scale
  • 6 cups shredded green and purple cabbage mix
  • 2 cups shredded carrots
  • 1/2 cup thinly sliced red onion
  • 1/4 cup fresh parsley, chopped
  • For the Zesty Vinaigrette:
  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Place the shredded cabbage, carrots, red onion, and parsley into a large mixing bowl.
  2. Make the dressing: In a small bowl or jar, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey (or maple syrup), salt, and pepper until the dressing emulsifies slightly.
  3. Dress the salad: Pour the vinaigrette over the cabbage mixture.
  4. Toss well: Use tongs to toss everything together until all the vegetables are lightly coated with the dressing.
  5. Serve or chill: You can serve this crunchy cabbage salad immediately, or cover the bowl and chill it in the refrigerator for at least 30 minutes to allow the flavors to meld.

Notes

  • For a heartier main dish cabbage salad, add grilled chicken or chickpeas before serving.
  • If you want an Asian flavor profile, swap the Dijon for 1 tablespoon of sesame oil and 1 tablespoon of rice vinegar in the dressing.
  • This vinegar based cabbage salad holds up well; it is a good choice for meal prep salads.
