Ingredients
Scale
1.5 lbs salmon fillet
2 tbsp Cajun seasoning
1 tbsp olive oil
Salt and pepper to taste
2 ripe peaches, diced
1/4 cup red onion, finely chopped
1 jalapeño, seeded and minced
2 tbsp fresh cilantro, chopped
1 tbsp lime juice
1 tsp honey
Instructions
Preheat your grill to medium-high heat.
Pat the salmon fillet dry with paper towels.
Rub the salmon with olive oil, Cajun seasoning, salt, and pepper.
Grill the salmon for 4-6 minutes per side, or until cooked through and flakes easily with a fork.
While the salmon is grilling, prepare the peach salsa. In a medium bowl, combine the diced peaches, red onion, jalapeño, cilantro, lime juice, and honey.
Mix gently to combine.
Serve the grilled salmon topped with the fresh peach salsa.
Notes
You can adjust the spice level of the salsa by adding or removing the jalapeño seeds.
If peaches are not in season, you can use frozen peaches, thawed and drained.
This dish pairs well with a side of rice or a fresh green salad.
