Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 pound smoked sausage, cut into 1-inch pieces
  • 1 pound baby red potatoes, quartered
  • 2 ears of corn, shucked and cut into 3-inch pieces
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Tear off four large pieces of heavy-duty aluminum foil.
  3. In a large bowl, combine the shrimp, sausage, potatoes, and corn.
  4. In a small bowl, whisk together the melted butter, Cajun seasoning, garlic powder, smoked paprika, and cayenne pepper (if using).
  5. Pour the butter mixture over the shrimp and vegetable mixture. Toss gently to coat everything evenly.
  6. Divide the mixture equally among the four foil pieces, placing it in the center of each.
  7. Season with salt and black pepper to your preference.
  8. Bring up the sides of each foil packet and seal them tightly, ensuring no steam can escape. You can create a double layer of foil for extra security.
  9. Place the foil packets on the grill or directly on the oven rack.
  10. Grill or bake for 15-20 minutes, or until the shrimp are pink and cooked through, and the potatoes are tender.
  11. Carefully open the foil packets (watch out for steam!).
  12. Garnish with fresh parsley and serve immediately with lemon wedges.

Notes

  • For spicier results, add more cayenne pepper.
  • Feel free to add other vegetables like bell peppers or onions.
  • Ensure your foil is heavy-duty to prevent tearing.
  • If baking, place the packets on a baking sheet for easier handling.
