Make a deconstructed California roll in a simple bowl format using seasoned sushi rice, imitation crab, avocado, and cucumber.

Ingredients

Scale
  • 2 cups cooked sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 ounces imitation crab meat (surimi), shredded
  • 1 large avocado, sliced
  • 1 medium cucumber, thinly sliced or diced
  • 2 tablespoons toasted sesame seeds
  • Optional: Nori sheets, cut into thin strips

Instructions

  1. Prepare the sushi rice: While the rice is warm, gently mix the rice vinegar, sugar, and salt in a small bowl until dissolved. Pour this mixture over the warm rice and fold gently until the seasoning is evenly distributed. Let the rice cool to room temperature.
  2. Prepare the crab: If using imitation crab sticks, shred them into bite-sized pieces. You can mix the shredded crab with 1 tablespoon of mayonnaise and a dash of sriracha for a simple crab salad, or leave it plain.
  3. Assemble the bowl: Divide the seasoned rice evenly among four serving bowls.
  4. Arrange the toppings: Place the shredded crab, sliced avocado, and cucumber neatly over the rice in separate sections.
  5. Garnish: Sprinkle the toasted sesame seeds over the bowl. Add nori strips if desired.
  6. Serve immediately with soy sauce and spicy mayo on the side.

Notes

  • For a quick spicy mayo, mix 3 parts mayonnaise with 1 part sriracha.
  • You can prepare the seasoned rice up to one day ahead and store it covered in the refrigerator. Bring it to room temperature before serving.
  • Use real crab meat instead of imitation crab for a richer flavor.
