Learn the simple technique to transform sharp raw onions into deeply sweet, savory caramelized onions. This staple recipe is perfect for gourmet toppings, dips, and pasta sauces.

Ingredients

Scale
  • 4 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar (optional, for faster browning)
  • 1/4 cup water or low-sodium vegetable broth (for deglazing)

Instructions

  1. Prepare the onions: Peel and slice the onions very thinly. Uniform slices help them cook evenly.
  2. Start the heat: Place a large, heavy-bottomed skillet over medium-low heat. Add the butter and olive oil. Let the butter melt completely.
  3. Add onions and salt: Add all the sliced onions to the skillet. Sprinkle with the salt. Stir to coat the onions evenly with the fat.
  4. Initial cooking (Sweating): Cook the onions uncovered for 10 to 15 minutes, stirring every few minutes. The onions will soften and release moisture. Do not let them brown yet.
  5. Begin caramelization: Reduce the heat to low. Continue cooking, stirring every 5 to 7 minutes. This slow process draws out the natural sugars. If the onions start sticking too much or look dry, add a tablespoon of water or broth to scrape up the browned bits (deglazing).
  6. Continue cooking: Maintain low heat. The process takes patience. After about 30 to 40 minutes total cooking time, the onions will begin to turn golden brown.
  7. Deepen the color: If you want a deeper, richer color, continue cooking, stirring more frequently (every 3-4 minutes). If using, sprinkle the optional sugar over the onions during the last 10 minutes to aid in deep caramelization.
  8. Finish: Cook until the onions are deep mahogany brown, very soft, and sweet. This usually takes 45 to 60 minutes total, depending on the heat and quantity. Remove from heat and use immediately or store.

Notes

  • For a quick onion hack, add 1/2 teaspoon of sugar early on to speed up the browning process, though the flavor will be slightly less complex than the slow method.
  • These slow cooked onions freeze well. Cool completely, then store in an airtight container for up to three months.
  • Use these sweet onion topping for burgers, mix them into cream cheese for a caramelized onion dip recipe, or use them as the base for a creamy onion pasta ingredient.
