Make this creamy, cheesy Cheeseburger Soup in one pot for a quick and hearty meal. This recipe captures the flavor of a classic cheeseburger using ground beef and potatoes, ready in about 30 minutes. For variations, you can easily adapt this for a keto diet by swapping potatoes for cauliflower or use a slow cooker for hands-off cooking.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon dried mustard powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 8 ounces sharp cheddar cheese, shredded
  • 1/2 cup heavy cream
  • Optional toppings: chopped pickles, extra shredded cheese, bacon bits

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the beef broth, diced potatoes, mustard powder, salt, and pepper. Bring the mixture to a boil, then reduce heat, cover, and simmer until the potatoes are tender, about 15 minutes.
  4. In a small bowl, whisk together the flour and milk until smooth. Pour this mixture into the simmering soup, stirring constantly until the soup thickens slightly.
  5. Reduce the heat to low. Stir in the shredded cheddar cheese until it is completely melted and the soup is smooth. Do not let the soup boil after adding the cheese.
  6. Stir in the heavy cream. Heat through for 2 minutes.
  7. Serve hot, topped with your favorite cheeseburger toppings like pickles or extra cheese.

Notes

  • Shred your own cheese instead of using pre-shredded for the creamiest melt.
  • For a low-carb version, substitute the potatoes with 3 cups of cauliflower florets and cook until tender.
  • If using a slow cooker, brown the beef and sauté the onions separately, then transfer everything except the milk, cream, and cheese to the slow cooker. Cook on low for 4-6 hours. Whisk the flour and milk mixture, stir it in during the last 30 minutes of cooking, then stir in the cheese and cream at the end.
