Make traditional, comforting chicken and dumplings with a rich, creamy broth and light, fluffy drop dumplings.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 6 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup all-purpose flour (for dumplings)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt (for dumplings)
  • 1/2 cup milk (for dumplings)
  • 4 tablespoons cold butter, cut into small pieces (for dumplings)

Instructions

  1. In a large pot, combine chicken broth, onion, carrots, celery, thyme, pepper, and salt. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes until vegetables soften.
  2. Stir in the cooked chicken and heavy cream. Bring the mixture back to a gentle simmer. Do not let it boil rapidly once the cream is added.
  3. Prepare the dumplings: In a medium bowl, whisk together the flour, baking powder, and salt for the dumplings. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined to form a soft dough. Do not overmix.
  5. Drop the dumpling dough by rounded teaspoons directly onto the simmering stew. Leave space between each dumpling.
  6. Cover the pot tightly and cook for 15 minutes without lifting the lid. This allows the dumplings to steam and become fluffy.
  7. Check one dumpling for doneness. If cooked through, remove from heat and serve immediately.

Notes

  • For a quicker version, use 3 cups of store-bought rotisserie chicken and 1 can (10.5 oz) of condensed cream of chicken soup instead of fresh cream and broth adjustments.
  • If you prefer a thicker stew before adding dumplings, mix 2 tablespoons of flour with 1/4 cup of cold water and stir into the simmering broth mixture before dropping the dumplings.
  • Do not lift the lid while the dumplings are steaming, as this releases the steam needed for them to rise properly.
