Make this simple, low-carb casserole featuring shredded chicken and cauliflower rice baked in a creamy, cheesy sauce. It is a quick, family-friendly dinner option.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 1 head cauliflower, riced (about 4 cups raw)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the riced cauliflower to the skillet. Sauté for 5 to 7 minutes until the cauliflower softens slightly.
  4. Pour in the chicken broth. Bring to a simmer and cook until the liquid is mostly absorbed, about 3 minutes.
  5. Reduce the heat to low. Stir in the cream cheese cubes, heavy cream, 3/4 cup of the cheddar cheese, Monterey Jack cheese, salt, and pepper. Stir constantly until the cream cheese melts and the sauce is smooth.
  6. Fold in the shredded cooked chicken. Transfer the mixture to the prepared baking dish.
  7. Sprinkle the remaining 1/4 cup of cheddar cheese evenly over the top.
  8. Bake for 20 to 25 minutes, or until the top is bubbly and lightly browned.
  9. Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

  • You can use frozen riced cauliflower; thaw and drain excess liquid before using.
  • For meal prepping, assemble the casserole completely, cover, and refrigerate for up to 2 days before baking. Add 10 minutes to the bake time if cooking from cold.
  • This recipe is naturally gluten-free and fits a Keto diet plan.
