Make this simple, moist poke cake featuring festive red and green colors perfect for your holiday gathering.

Ingredients

Scale
  • 1 box white cake mix (plus ingredients listed on box)
  • 1 cup boiling water
  • 1 package (3 oz) red gelatin (Jello)
  • 1 package (3 oz) green gelatin (Jello)
  • 1 cup cold water, divided
  • 1 container (8 oz) frozen whipped topping, thawed
  • 1/4 cup sweetened condensed milk
  • Red and green sprinkles for garnish

Instructions

  1. Prepare and bake the white cake according to the box directions using a 9×13 inch baking pan. Let the cake cool in the pan for 15 minutes.
  2. While the cake cools, prepare the gelatin. In separate bowls, dissolve the red gelatin in 1/2 cup boiling water and the green gelatin in 1/2 cup boiling water. Stir each until fully dissolved.
  3. Add 1/2 cup cold water to the red gelatin mixture and 1/2 cup cold water to the green gelatin mixture. Set both aside to cool to room temperature, about 30 minutes. Do not let them set.
  4. Use the handle of a wooden spoon or a fork to poke holes about 1 inch apart all over the warm cake surface.
  5. Carefully pour the red gelatin mixture evenly over half of the cake, poking gently to help it seep into the holes. Pour the green gelatin mixture over the remaining half of the cake.
  6. Refrigerate the cake for at least 4 hours, or until the gelatin is fully set.
  7. In a small bowl, whisk together the thawed whipped topping and the sweetened condensed milk until smooth.
  8. Spread the whipped topping mixture evenly over the set gelatin cake.
  9. Sprinkle the top generously with red and green sprinkles before serving.

Notes

  • For a stronger color contrast, you can use a clear vanilla or lemon cake mix instead of white.
  • If you want a peppermint flavor, substitute the cold water in the gelatin with peppermint schnapps or peppermint extract mixed with the cold water.
  • This cake tastes best when served chilled directly from the refrigerator.
