Ingredients
Scale
1/4 cup cottage cheese (full fat or low fat)
1 large egg
1 tablespoon unsweetened cocoa powder
1 tablespoon almond flour
1 tablespoon maple syrup or sweetener of choice
1/4 teaspoon vanilla extract
1/4 teaspoon baking powder
1 small square (about 1/2 ounce) dark chocolate, chopped (optional, for extra fudginess)
Pinch of salt
Instructions
Combine the cottage cheese, egg, cocoa powder, almond flour, maple syrup, vanilla extract, baking powder, and salt in a microwave-safe mug or small bowl.
Mix well with a fork until the batter is smooth and all ingredients are incorporated. Scrape down the sides.
If using, stir in the chopped dark chocolate pieces.
Microwave on high power for 60 to 90 seconds. Cooking time varies based on microwave wattage; start checking at 60 seconds.
The brownie is done when the top looks set but the center is still slightly soft for a fudgy texture.
Let it cool for one minute before eating directly from the mug.
Notes
For a cake-like texture, cook for a few seconds longer. For a fudgier result, undercook slightly.
You can substitute the almond flour with oat flour if you prefer.
This recipe is a great high protein snack for a quick chocolate fix.
Top with a few berries or a sprinkle of sea salt after cooking.
