Make this rich and creamy corn casserole using cream cheese and a crunchy buttery Ritz cracker topping. It is a simple, crowd-pleasing side dish perfect for holidays or weeknight dinners.

Ingredients

Scale
  • 1 (15 ounce) can creamed corn
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (8.5 ounce) package corn muffin mix (like Jiffy)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 4 tablespoons unsalted butter, melted
  • 1 sleeve (about 30) Ritz crackers, crushed

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the creamed corn, drained whole kernel corn, corn muffin mix, sour cream, and shredded cheddar cheese. Mix until just combined. Do not overmix.
  3. Pour the corn mixture evenly into the prepared baking dish.
  4. In a small bowl, mix the melted butter with the crushed Ritz crackers until the crumbs are coated.
  5. Sprinkle the buttery cracker mixture evenly over the top of the casserole batter.
  6. Bake for 35 to 40 minutes, or until the edges are set and the topping is golden brown.
  7. Let the casserole cool for 5 minutes before serving.

Notes

  • For an extra rich flavor, substitute half of the sour cream with cream cheese, softened.
  • If you prefer a softer topping, melt the butter and toss the crackers in it, then sprinkle them on top during the last 10 minutes of baking.
  • This casserole reheats well in the microwave or oven the next day.
