Make a rich, creamy, restaurant-quality creamed spinach side dish quickly using fresh spinach and a simple cream sauce.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed very dry
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese, cubed
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Heat the olive oil and butter in a large skillet over medium heat.
  2. Add the minced garlic and chopped shallot to the skillet. Cook until fragrant, about 2 minutes. Do not brown the garlic.
  3. Add the thoroughly drained spinach to the skillet. Cook for 3 minutes, stirring constantly, to heat it through.
  4. Pour in the heavy cream and add the cubed cream cheese. Stir until the cream cheese melts and the sauce thickens slightly, about 3 to 4 minutes.
  5. Stir in the Parmesan cheese, salt, pepper, and nutmeg. Continue stirring until the sauce is smooth and coats the spinach well.
  6. Taste and adjust seasoning if needed. Serve immediately as a side dish.

Notes

  • For a thicker sauce, reduce the heavy cream slightly before adding the cheese.
  • You can substitute frozen spinach with 1.5 pounds of fresh spinach; wilt it first, then squeeze out all excess water before adding it to the skillet.
  • This recipe is naturally low in carbohydrates and fits well into a Keto diet plan.
