Enjoy a comforting bowl of Creamy Corn and Bacon Chowder, a simple, hearty soup perfect for any occasion. This recipe combines sweet corn with savory bacon for a delicious one-pot meal.

Ingredients

Scale
  • 1 pound bacon, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh or frozen corn kernels
  • 4 cups chicken broth
  • 2 cups milk
  • 1/2 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a large pot or Dutch oven over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the pot.
  2. Add the chopped onion to the pot and cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the corn kernels and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. In a small bowl, whisk together the milk and flour until smooth.
  6. Gradually whisk the milk mixture into the simmering soup.
  7. Stir in the heavy cream and cook, stirring constantly, until the chowder has thickened, about 5 minutes. Do not boil.
  8. Season with salt and pepper to taste.
  9. Ladle the chowder into bowls and top with the reserved crumbled bacon.

Notes

  • For a thicker chowder, you can use half-and-half instead of milk.
  • Garnish with fresh chives or parsley if desired.
  • This chowder can be made ahead of time and reheated gently on the stovetop.
