Make a tender, flavorful meatloaf using your slow cooker, seasoned with French onion soup mix and topped with melted Swiss cheese.

Ingredients

Scale
  • 2 lbs ground beef
  • 1 package (1 oz) dry onion soup mix
  • 1 cup bread crumbs
  • 1 large egg, lightly beaten
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 cup water
  • 1/2 cup sliced Swiss cheese (about 4 slices)

Instructions

  1. In a large bowl, combine the ground beef, onion soup mix, bread crumbs, egg, milk, Worcestershire sauce, thyme, and pepper. Mix gently with your hands until just combined. Do not overmix.
  2. Shape the mixture into a loaf shape and place it in the bottom of a 5-quart or larger slow cooker.
  3. Pour the water around the base of the meatloaf.
  4. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 3 to 3.5 hours.
  5. During the last 15 minutes of cooking, remove the lid and arrange the Swiss cheese slices evenly over the top of the meatloaf. Replace the lid until the cheese is melted.
  6. Remove the meatloaf carefully from the slow cooker using two spatulas. Let it rest for 5 minutes before slicing and serving.

Notes

  • For a richer flavor, you can substitute 1/2 cup of caramelized onions for 1/2 cup of the ground beef.
  • If you prefer a firmer loaf, line the slow cooker insert with parchment paper before shaping the meatloaf inside it.
  • Drain off any excess liquid from the slow cooker before adding the cheese topping.
