Make a naturally sweet, vegan caramel sauce using only four ingredients. This recipe yields a smooth, creamy topping perfect for desserts or fruit.

Ingredients

Scale
  • 1 cup Medjool dates, pitted
  • 1/2 cup hot water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. Place the pitted dates and hot water into a high-speed blender or food processor.
  2. Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
  3. Add the vanilla extract and sea salt. Pulse a few times to combine thoroughly.
  4. If the sauce is too thick, add one tablespoon of hot water at a time until you reach your desired pouring consistency.
  5. Transfer the date caramel to an airtight container. It will thicken further as it cools.

Notes

  • Use very soft, plump Medjool dates for the best, creamiest results.
  • For a salted caramel flavor, increase the sea salt to 1/2 teaspoon.
  • Store leftover sauce in the refrigerator for up to two weeks. Warm slightly before serving if it becomes too firm.
