- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 1 packet (1 ounce) taco seasoning mix
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1 can (10 ounces) red enchilada sauce
- 1 cup water
- 2 cups shredded cheddar cheese, divided
- 1 bag (9.25 ounces) Nacho Cheese Flavored Tortilla Chips (Doritos), crushed
- 1 cup shredded Monterey Jack cheese
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
- Add the ground beef to the skillet. Cook, breaking it up with a spoon, until it is fully browned. Drain off any excess grease.
- Stir the taco seasoning mix, cream of chicken soup, enchilada sauce, and water into the beef mixture. Bring the mixture to a simmer.
- Remove the skillet from the heat. Stir in 1 cup of the cheddar cheese until it melts into the sauce.
- Spread half of the crushed Doritos into the bottom of the prepared baking dish.
- Pour the beef mixture evenly over the layer of chips.
- Sprinkle the remaining 1 cup of cheddar cheese and the 1 cup of Monterey Jack cheese over the beef layer.
- Top the cheese with the remaining crushed Doritos.
- Bake for 20 to 25 minutes, or until the casserole is bubbly and the topping is lightly golden brown.
- Let the casserole rest for 5 minutes before serving.
Notes
- For a spicier kick, add a can of diced green chilies to the beef mixture.
- You can substitute ground turkey or shredded cooked chicken for the ground beef.
- If you prefer a softer topping, mix the remaining Doritos with 1 tablespoon of melted butter before sprinkling them on top before baking.
