Ingredients
Scale
3 tablespoons chicken fat or butter
3 tablespoons all-purpose flour
2 cups chicken broth (low sodium preferred)
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 2 tablespoons reserved pan drippings from roasted chicken
Instructions
If using pan drippings, measure 3 tablespoons of fat from the roasting pan and place it in a medium saucepan over medium heat. If not using drippings, melt 3 tablespoons of butter in the saucepan over medium heat.
Whisk the flour into the melted fat or butter. Cook, stirring constantly, for 1 to 2 minutes until the mixture forms a smooth paste (a roux) and smells slightly nutty. Do not let it brown.
Slowly pour in the chicken broth while whisking continuously to prevent lumps.
Bring the mixture to a simmer, still whisking occasionally. Let it cook for 3 to 5 minutes until the gravy thickens enough to coat the back of a spoon.
Remove the saucepan from the heat. Stir in the salt and pepper. Taste and adjust seasoning if needed.
Serve immediately over your preferred dish.
Notes
For a richer flavor when using drippings, substitute 1 tablespoon of the butter with 1 tablespoon of the collected pan drippings.
If you prefer a very thick gravy, cook the roux for an extra minute or use 4 tablespoons of flour instead of 3.
To make this gravy without drippings, simply use 3 tablespoons of butter and 2 cups of chicken broth.
