Make easy, portable French toast muffins baked in a muffin tin. These combine classic French toast flavor with a sweet cinnamon sugar coating, perfect for make-ahead breakfasts.

Ingredients

Scale
  • 8 cups cubed day-old bread (Brioche or Challah recommended)
  • 6 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup granulated sugar (for batter)
  • 1/2 cup butter, melted (for coating)
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin tin well.
  2. Place the cubed bread evenly into the prepared muffin cups, filling them about three-quarters full.
  3. In a large bowl, whisk together the eggs, milk, vanilla extract, 1/2 teaspoon cinnamon, nutmeg, and 1/4 cup sugar until fully combined.
  4. Pour the egg mixture slowly and evenly over the bread cubes in the muffin cups. Press down gently to help the bread absorb the liquid.
  5. Let the mixture sit for 10 minutes to allow the bread to soak up the custard.
  6. Bake for 18 to 22 minutes, or until the tops are golden brown and the center is set.
  7. While the muffins bake, prepare the topping: In a small bowl, mix the 1/2 cup sugar and 1 tablespoon cinnamon.
  8. Remove the muffins from the oven. Let them cool in the tin for 5 minutes.
  9. Melt the butter. Gently brush the tops of the warm muffins with the melted butter.
  10. Immediately roll or sprinkle the buttered tops generously in the cinnamon sugar mixture.
  11. Remove the French toast muffins from the tin and serve warm or store for later.

Notes

  • Use slightly stale or day-old bread for the best texture; fresh bread can become too soggy.
  • For a make-ahead option, assemble the muffins (steps 1-4) the night before, cover, and refrigerate. Add 5 minutes to the baking time if baking directly from the refrigerator.
  • Serve with maple syrup or powdered sugar for extra sweetness.
