Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • 2 (14 ounce) cans sweetened condensed milk
  • ½ cup key lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon vanilla extract
  • Green food coloring (optional)
  • Whipped cream, for topping
  • Lime slices, for garnish

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture evenly into the bottom of a parchment-lined 8×8 inch baking dish.
  2. In a separate bowl, whisk together sweetened condensed milk, key lime juice, lime zest, and vanilla extract until well combined.
  3. If desired, add a few drops of green food coloring and stir until you achieve your preferred shade of green.
  4. Pour the key lime filling over the graham cracker crust in the baking dish.
  5. Cover the dish with plastic wrap and freeze for at least 4-6 hours, or until firm.
  6. Once frozen, lift the parchment paper to remove the pie from the dish. Cut into small, bite-sized squares.
  7. Serve the frozen key lime pie bites immediately, topped with whipped cream and a lime slice if desired.

Notes

  • For a different crust flavor, you can use crushed shortbread cookies or vanilla wafers instead of graham crackers.
  • Ensure your key lime juice is fresh for the best flavor.
  • Store any leftover bites in an airtight container in the freezer.
