Make flavorful, tender, and crispy roasted vegetables using potatoes, carrots, and zucchini seasoned simply with garlic and herbs. This is an easy, one-pan side dish perfect for any weeknight meal.

Ingredients

Scale
  • 1 lb small potatoes, quartered
  • 3 medium carrots, cut into 1-inch pieces
  • 2 medium zucchini, cut into 1-inch chunks
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the quartered potatoes and carrots. Drizzle with 2 tablespoons of the olive oil, salt, and pepper. Toss to coat evenly.
  3. Spread the potatoes and carrots in a single layer on the prepared baking sheet. Roast for 15 minutes.
  4. While the root vegetables roast, place the zucchini in the same bowl. Add the remaining 1 tablespoon of olive oil, minced garlic, rosemary, and thyme. Toss to coat.
  5. Remove the baking sheet from the oven. Push the partially cooked potatoes and carrots to one side. Add the seasoned zucchini to the empty space on the sheet, spreading all vegetables into a single layer.
  6. Return the sheet pan to the oven and roast for another 15 to 20 minutes, or until the potatoes are tender and the edges of all vegetables are slightly browned and crisp.
  7. Serve immediately as a side dish.

Notes

  • For extra crispiness, ensure your vegetables are dry before tossing them with oil.
  • If you prefer a softer texture, you can add the zucchini at the same time as the potatoes and carrots.
  • Substitute any root vegetable you prefer, such as parsnips or sweet potatoes, for the carrots.
