Ingredients
Scale
12 oz dried noodles (e.g., ramen, spaghetti, or fresh egg noodles)
1 cup scallions, green parts only, thinly sliced
1/2 cup fresh ginger, finely minced
1/4 cup neutral oil (e.g., canola, vegetable, or grapeseed)
2 tablespoons soy sauce
1 tablespoon light soy sauce
1 teaspoon sesame oil
1/2 teaspoon sugar
Pinch of white pepper
Instructions
Cook the noodles according to package directions until al dente. Reserve about 1/4 cup of the hot cooking water before draining. Drain the noodles and set aside.
While the noodles cook, prepare the aromatic base. In a heatproof bowl, combine the minced ginger and sliced scallions.
In a small saucepan, heat the neutral oil over medium heat until it shimmers, about 3 to 4 minutes. The oil should be hot enough to sizzle when it hits the aromatics.
Carefully pour the hot oil over the ginger and scallions in the bowl. The mixture will sizzle vigorously. Stir immediately to coat everything.
Add the soy sauce, light soy sauce, sesame oil, sugar, and white pepper to the ginger-scallion mixture. Stir well to combine the sauce.
Add the drained noodles to the bowl with the sauce. Toss everything together until the noodles are evenly coated.
If the sauce seems too thick, add a tablespoon or two of the reserved hot noodle water until you reach your desired consistency.
Serve immediately while hot.
Notes
For extra flavor, you can add 1 tablespoon of finely minced garlic to the ginger and scallions before adding the hot oil.
Use fresh, firm scallions for the best texture and flavor in the oil.
This dish is excellent served cold as a refreshing summer noodle salad; simply skip the hot oil step and mix the sauce ingredients cold.
Add cooked shredded chicken or blanched broccoli for a more complete meal.
