Ingredients

Scale
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1 large egg
  • 1 fresh pineapple, peeled, cored, and sliced into 1/2-inch rings
  • Fresh mint sprigs for garnish (optional)

Instructions

  1. In a medium bowl, whisk together the granulated sugar, water, melted butter, cinnamon, nutmeg, vanilla extract, and salt. Set aside.
  2. In a separate bowl, whisk together the flour and baking powder.
  3. Gradually add the wet ingredients to the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  4. Stir in the egg until the batter is smooth.
  5. Preheat your grill to medium heat.
  6. Arrange the pineapple rings on the grill. Grill for 3-4 minutes per side, or until lightly caramelized and slightly softened.
  7. Remove the grilled pineapple from the grill and let cool slightly.
  8. In a 9-inch oven-safe skillet or cake pan, arrange the grilled pineapple rings in a single layer.
  9. Pour the cake batter evenly over the pineapple.
  10. Cover the skillet or pan with foil.
  11. Grill the cake over indirect heat for 30-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Carefully remove the cake from the grill and let it cool in the pan for 10 minutes before inverting it onto a serving plate.
  13. Garnish with fresh mint sprigs if desired.

Notes

  • Ensure your grill is clean to prevent sticking.
  • Adjust grilling time based on your grill’s temperature.
  • This cake is best served warm.
  • For extra flavor, you can brush the pineapple with a little rum before grilling.
