Ingredients
Scale
2 lbs new potatoes, halved or quartered if large
3 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 teaspoon dried oregano
Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
Wash the new potatoes well. Cut them into uniform, bite-sized pieces. If the potatoes are very small, you can leave them whole.
Pat the cut potatoes completely dry using paper towels. This step helps achieve crispy skin.
In a large bowl, toss the dried potatoes with olive oil until they are evenly coated.
Add the salt, pepper, minced garlic, rosemary, thyme, and oregano to the bowl. Toss again until the seasonings distribute over all the potatoes.
Spread the seasoned potatoes in a single layer on a large baking sheet. Do not overcrowd the pan; use two sheets if necessary for better crisping.
Roast for 30 to 40 minutes, flipping the potatoes halfway through the cooking time, until they are golden brown and tender when pierced with a fork.
Serve immediately as a side dish.
Notes
For extra crispiness, you can briefly boil the potatoes for 5 minutes before tossing them with oil and herbs. Make sure to dry them thoroughly after boiling.
Use any combination of fresh, hardy herbs you prefer, such as sage or marjoram.
If you do not have fresh herbs, use 1 teaspoon total of dried herbs instead of the fresh amounts listed.
