Ingredients
Scale
1 cup all-purpose flour
1 scoop vanilla or unflavored whey protein powder
2 teaspoons baking powder
1 tablespoon sugar substitute (optional)
1/2 teaspoon salt
1 large egg
1 cup milk (dairy or non-dairy)
1/4 cup plain Greek yogurt
1 teaspoon vanilla extract
2 tablespoons melted coconut oil or butter
Instructions
Combine the flour, protein powder, baking powder, sugar substitute, and salt in a large bowl. Whisk these dry ingredients together well.
In a separate bowl, whisk together the egg, milk, Greek yogurt, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix; a few lumps are fine.
Stir in the melted coconut oil or butter.
Preheat your waffle iron according to the manufacturer’s directions. Lightly grease the iron if necessary.
Pour the batter onto the hot waffle iron, using the amount recommended for your specific iron size.
Cook until the waffles are golden brown and crisp, usually 3 to 5 minutes.
Serve immediately with your favorite toppings. This is a great breakfast for fitness enthusiasts.
Notes
For gluten free high protein waffles, substitute the all-purpose flour with a 1:1 gluten-free baking blend.
If you want egg white protein waffles, replace the whole egg with 1/2 cup of liquid egg whites and add 1/4 cup of water to the wet ingredients.
This recipe works well for meal prep protein waffles; cool completely before storing in an airtight container in the refrigerator for up to 4 days.
To make this a low carb high protein waffles recipe, substitute 1/2 cup of the flour with almond flour and use a zero-calorie sweetener.
