A simple, comforting casserole that captures the classic flavors of a Reuben sandwich in a hearty, shareable dish.

Ingredients

Scale
  • 1 pound cooked corned beef, shredded or chopped
  • 1 (16 ounce) can sauerkraut, drained well
  • 1 cup Thousand Island dressing
  • 1 cup Swiss cheese, shredded
  • 4 cups rye bread cubes (about 6 slices)
  • 1/2 cup butter, melted
  • 1 teaspoon caraway seeds (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded corned beef, drained sauerkraut, Thousand Island dressing, and half of the shredded Swiss cheese. Mix gently until everything is coated.
  3. Toss the rye bread cubes with the melted butter and caraway seeds, if using.
  4. Spread half of the bread mixture evenly in the bottom of the prepared baking dish.
  5. Spoon the corned beef and sauerkraut mixture over the bread layer.
  6. Top the mixture evenly with the remaining bread cubes.
  7. Sprinkle the remaining half of the Swiss cheese over the top layer of bread.
  8. Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the top is lightly golden brown.
  9. Let the casserole rest for 5 minutes before serving.

Notes

  • For a variation using crescent rolls, press one tube of refrigerated crescent roll dough into the bottom of the baking dish before adding the meat mixture, and place the second tube on top before the final cheese layer. Adjust baking time slightly if using dough.
  • Drain the sauerkraut thoroughly to prevent the casserole from becoming watery. Press it between paper towels if necessary.
  • You can substitute marbled rye bread for standard rye bread for extra flavor.
