Enjoy these Honey Chipotle Chicken Lettuce Wraps for a flavorful, low-carb meal. Tender chicken coated in a sweet and smoky chipotle-honey sauce is served in crisp lettuce cups.

Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1/4 cup honey
  • 2 tablespoons chopped chipotle peppers in adobo sauce
  • 1 tablespoon adobo sauce from the can
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 8-10 large lettuce leaves (butter, romaine, or iceberg), for serving
  • Optional garnishes: chopped cilantro, sliced jalapeños, chopped peanuts

Instructions

  1. In a bowl, toss the chicken pieces with salt, pepper, smoked paprika, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat. Add the chicken and cook until browned on all sides.
  3. In a separate bowl, whisk together chicken broth, honey, chopped chipotle peppers, adobo sauce, soy sauce, and lime juice.
  4. Pour the sauce over the chicken in the skillet. Bring to a simmer, then reduce heat and cook for 8-10 minutes, or until the chicken is cooked through and the sauce has thickened.
  5. Taste and adjust seasoning if needed.
  6. Spoon the chicken mixture into the lettuce leaves.
  7. Garnish with your favorite toppings, if desired.

Notes

  • Adjust the amount of chipotle peppers to control the spice level.
  • For a spicier sauce, add more adobo sauce or a pinch of cayenne pepper.
  • If you don’t have chipotle peppers in adobo sauce, you can use chipotle powder, but you may need to adjust the liquid content.
