Create a silky smooth Honey Lavender Panna Cotta, an elegant dessert perfect for special occasions. This recipe balances the floral notes of lavender with the natural sweetness of honey for a sophisticated treat.

Ingredients

Scale
  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/3 cup honey
  • 1 tablespoon dried culinary lavender buds
  • 1 teaspoon vanilla extract
  • 1/4 cup cold water
  • 2 1/4 teaspoons unflavored gelatin

Instructions

  1. In a saucepan, combine heavy cream, whole milk, honey, and lavender buds. Heat gently over medium heat until just simmering, then remove from heat.
  2. Let the mixture steep for 15-20 minutes to infuse the lavender flavor.
  3. While the cream mixture steeps, sprinkle the gelatin over the cold water in a small bowl. Let it sit for 5-10 minutes to bloom.
  4. Strain the cream mixture through a fine-mesh sieve into a clean bowl, discarding the lavender buds.
  5. Gently reheat the strained cream mixture until warm (do not boil).
  6. Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved. Stir in the vanilla extract.
  7. Pour the mixture into individual ramekins or serving glasses.
  8. Chill for at least 4 hours, or until completely set.
  9. Serve chilled. Garnish with a few fresh lavender sprigs or a drizzle of honey if desired.

Notes

  • Ensure you use culinary-grade lavender, as other types can be too strong or bitter.
  • Do not boil the cream mixture, as this can affect the texture.
  • Chill time may vary depending on your refrigerator.
