Ingredients

Scale
  • 2 cups cooked, shredded chicken breast
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • Optional: 2 slices cooked, crumbled bacon
  • Optional: 1/2 small avocado, mashed

Instructions

  1. Place the shredded chicken in a medium bowl.
  2. In a separate small bowl, whisk together the Greek yogurt, Dijon mustard, honey, apple cider vinegar, onion powder, garlic powder, salt, and pepper until smooth. This is your creamy honey mustard dressing.
  3. Pour the dressing over the shredded chicken.
  4. Add the chopped celery and red onion. If using, add the crumbled bacon and mashed avocado now.
  5. Use a fork or spatula to mix all ingredients until the chicken is evenly coated and creamy.
  6. Taste the salad and adjust seasoning if needed.
  7. Chill for at least 15 minutes before serving for best flavor.
