Ingredients

Scale
  • 1 large head cauliflower, cut into florets
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper
  • 8 small corn or flour tortillas
  • 2 tablespoons vegetable oil
  • Optional toppings: chopped green onions, sesame seeds, shredded carrots, cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together soy sauce, gochujang, rice vinegar, sesame oil, honey or maple syrup, minced garlic, grated ginger, and black pepper.
  3. Add the cauliflower florets to the bowl and toss to coat them evenly with the sauce.
  4. Spread the coated cauliflower in a single layer on a baking sheet.
  5. Roast for 20-25 minutes, or until the cauliflower is tender and slightly browned, flipping halfway through.
  6. While the cauliflower is roasting, warm the tortillas according to package directions.
  7. Once the cauliflower is roasted, you can lightly pan-fry it in a skillet with a little vegetable oil for extra crispiness if desired.
  8. Fill each tortilla with the Korean BBQ cauliflower.
  9. Add your favorite toppings like green onions, sesame seeds, shredded carrots, and cilantro.

Notes

  • Adjust the gochujang amount to control the spice level.
  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
  • Ensure cauliflower florets are not overcrowded on the baking sheet for even roasting.
