Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Pour in the melted butter and stir until the crumbs are evenly moistened. Press the mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 8-10 minutes, until lightly golden. Remove from oven and let it cool slightly.
  4. In a large bowl, beat the softened cream cheese and 3/4 cup sugar until smooth and creamy.
  5. Add the eggs one at a time, beating well after each addition. Stir in the sour cream, lemon zest, and lemon juice until just combined. Do not overmix.
  6. Gently fold in the fresh blueberries.
  7. Pour the cream cheese mixture over the cooled crust.
  8. Bake for 30-35 minutes, or until the edges are set and the center is still slightly jiggly.
  9. Let the bars cool completely in the pan on a wire rack.
  10. Once cooled, chill the bars in the refrigerator for at least 2 hours before cutting into bars.

Notes

  • For clean cuts, use a sharp knife that has been dipped in hot water and wiped dry between cuts.
  • You can substitute frozen blueberries if fresh ones are not available. If using frozen, do not thaw them before adding to the batter.
