Assemble bright, layered lemon curd parfait cups using a simple graham cracker base and a light whipped cream topping.

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup melted unsalted butter
  • 2 tablespoons granulated sugar
  • 1 1/2 cups prepared lemon curd (store-bought or homemade)
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Lemon zest, for garnish

Instructions

  1. Combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar in a small bowl. Mix until the crumbs are evenly moistened.
  2. Divide the crumb mixture evenly among 4 small serving glasses or cups. Press the mixture lightly into the bottom of each cup to form the base layer.
  3. In a separate bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form. This is your whipped cream layer.
  4. Spoon or pipe about 3 tablespoons of lemon curd over the graham cracker base in each cup.
  5. Top the lemon curd layer with a generous layer of the prepared whipped cream.
  6. Repeat the layers: add a second layer of lemon curd, followed by a final layer of whipped cream.
  7. Chill the parfaits for at least 30 minutes before serving.
  8. Garnish each parfait cup with a sprinkle of fresh lemon zest just before serving.

Notes

  • You can substitute shortbread cookie crumbs for the graham crackers for a different base flavor.
  • For a firmer cream layer, substitute half of the heavy cream with mascarpone cheese, beating it with the powdered sugar before adding the remaining cream.
  • Make the base layer and lemon curd up to one day ahead; assemble the parfaits a few hours before serving for best texture.
