Follow these steps to prepare flavorful chicken skewers marinated in fresh lemon juice and a blend of garden herbs, cooked perfectly on the grill.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • Wooden or metal skewers (if using wood, soak for 30 minutes)

Instructions

  1. In a medium bowl, whisk together the lemon juice, olive oil, rosemary, thyme, lemon zest, minced garlic, salt, pepper, and oregano to create the marinade.
  2. Add the cubed chicken breast to the marinade. Toss to coat completely.
  3. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the chicken to absorb the flavor. Do not marinate longer than 4 hours due to the acid in the lemon juice.
  4. Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
  5. Thread the marinated chicken pieces onto the soaked wooden or metal skewers, leaving a small space between each piece.
  6. Place the skewers on the preheated grill. Cook for 4 to 6 minutes per side, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F.
  7. Remove the skewers from the grill and let them rest for 5 minutes before serving.

Notes

  • For extra moisture, thread pieces of bell pepper or onion between the chicken cubes on the skewer.
  • If you do not have fresh herbs, substitute with 1 teaspoon dried rosemary and 1 teaspoon dried thyme.
  • Serve these skewers over rice pilaf or with a simple green salad.
