A simple, make-ahead appetizer featuring cheddar and cream cheese marinated in an herb and garlic oil mixture.

Ingredients

Scale
  • 8 ounces sharp cheddar cheese, cut into 1-inch cubes
  • 4 ounces cream cheese, cut into 1-inch cubes
  • 1/2 cup olive oil
  • 2 tablespoons white wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Place the cheddar cubes and cream cheese cubes into a medium, non-reactive container or a sealable jar.
  2. In a small bowl, whisk together the olive oil, white wine vinegar, minced garlic, oregano, basil, thyme, pepper, and salt.
  3. Pour the oil and herb mixture over the cheese cubes, ensuring all pieces are submerged in the marinade.
  4. Cover the container tightly.
  5. Refrigerate for at least 4 hours, or preferably overnight, to allow the cheese to absorb the flavors.
  6. When ready to serve, let the cheese sit at room temperature for 15 minutes before presenting.
  7. Serve with crackers, pita chips, or bread slices.

Notes

  • You can substitute cheddar with Monterey Jack or Colby cheese for a milder flavor.
  • For a spicier kick, add 1/4 teaspoon of red pepper flakes to the marinade.
  • This appetizer tastes best when marinated for 24 hours.
  • Use a glass container for the best marinating results.
