Transform your leftover mashed potatoes into these irresistible, crispy potato cakes. They have a golden exterior, a soft, fluffy center, and are packed with sharp cheddar and fresh chives. This easy recipe makes a perfect side dish or snack.

Ingredients

Scale
  • 3 cups leftover mashed potatoes (cold)
  • 1 large egg, lightly beaten
  • 1/2 cup all-purpose flour
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons chopped fresh chives
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil, for frying

Instructions

  1. Place the cold mashed potatoes in a medium bowl. Add the beaten egg, flour, shredded cheddar cheese, chives, garlic powder, salt, and pepper.
  2. Mix the ingredients gently with a fork until just combined. Do not overmix; the mixture should hold together when pressed.
  3. Shape the potato mixture into small patties, about 1/2 inch thick and 2 to 3 inches wide. You should get about 8 to 10 cakes.
  4. Heat the vegetable oil in a large skillet over medium heat. The oil should coat the bottom of the pan.
  5. Carefully place the potato cakes into the hot oil, ensuring you do not overcrowd the skillet. Work in batches if necessary.
  6. Cook for 3 to 4 minutes per side, until the cakes are deep golden brown and crispy on the outside.
  7. Remove the cooked cakes from the skillet and place them on a plate lined with paper towels to drain excess oil.
  8. Serve the mashed potato cakes immediately as a side dish or snack.

Notes

  • Cold mashed potatoes work best because they are firmer and hold their shape better during frying.
  • For an extra crispy crust, you can lightly dredge the formed patties in a small amount of extra flour before frying.
  • Serve these savory potato pancakes with a dollop of sour cream or plain Greek yogurt for a great flavor contrast.
  • If you do not have chives, use 2 tablespoons of finely chopped green onions for a similar flavor boost.
