Follow this recipe to bake tender, flaky scones featuring the earthy flavor of matcha green tea and sweet white chocolate chips, finished with a bright lemon glaze.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons culinary grade matcha powder
  • 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
  • 1/2 cup white chocolate chips
  • 3/4 cup heavy cream, cold
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and matcha powder until well combined.
  3. Cut the cold butter into the dry ingredients using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  4. Stir in the white chocolate chips.
  5. Make a well in the center and pour in the cold heavy cream. Mix gently with a fork until just combined. Do not overmix; the dough will be shaggy.
  6. Turn the dough out onto a lightly floured surface. Gently pat the dough into a 3/4-inch thick circle or square.
  7. Cut the dough into 8 wedges or use a round cutter. Place the scones onto the prepared baking sheet.
  8. In a small bowl, whisk the egg and milk together for the egg wash. Brush the tops of the scones lightly with the wash.
  9. Bake for 15 to 18 minutes, or until the tops are set and lightly golden brown on the edges.
  10. While the scones cool slightly, prepare the glaze: Whisk the powdered sugar and lemon juice together until smooth. Add more lemon juice, a few drops at a time, if the glaze is too thick.
  11. Drizzle the lemon glaze over the warm or cooled scones. Allow the glaze to set before serving.

Notes

  • Keep your butter and cream very cold; this is key to flaky scones.
  • To prevent white chocolate from melting out completely, toss the chips with one teaspoon of flour before adding them to the dough.
  • For a stronger matcha flavor, you can increase the powder to 3 tablespoons, but this may slightly alter the texture.
  • If you do not have lemon juice, use milk or water for a simple sugar glaze instead.
